Crock pot Lentils with decent flavor
1 1/2 cups dried lentils (green, red, whatever) (rinse the lentils before)
3 cups water (or broth)
2 Tablespoons ginger (minced, I guess)
1 Tablespoon each cumin, coriander, tumeric
1 28-oz can of diced tomatoes (or freshly diced if you're into that)
Several garlic (lol dear past me, WTF is this) (I'm guessing some amount of minced garlic)
1/2 onion finely chopped (medium onion)
Cook on high for a few hours

Before serving, stir in
1 can coconut milk
2 teaspoons salt
Serve with rice, naan, mashed potatoes, whatever. Keeps really well in the fridge.
